Taco Tuesday was in full effect today and my tofu tacos were absolutely delicious, if I do say so myself. They were super simple to make but I just had too much to type out to include the process in my Instagram post. Of course, if you're not a vegetarian or vegan you can substitute the tofu for chicken, beef, etc. Now to get to the good stuff... how to make these quick & easy tofu tacos.
What You Need:
What to do: 1. Preheat the oven to 375 degrees. 2. Place diced tofu on half of a greased baking sheet. Put hot sauce on the tofu- again, add as much or little as you'd like. I like my food spicy so I put just a bit more. Mix the hot sauce and tofu to make sure you coat each piece. 3. Place the diced Roma tomato on the other half of the baking sheet to bake. 4. I cooked my tofu and tomatoes for about 20 minutes, just keep an eye on yours and wait for the tofu to brown up a bit. 5. While thats cooking, prepare in a pan: olive oil, chopped onion and green pepper. When the tofu and tomatoes are just about done, start sautéing the onion and pepper (for about 5 minutes) 6. Once those are browned up add in the tofu to crisp it up and use a spatula to cut it in tinier pieces, like you would making ground beef tacos. 7. Prepare the tortilla - I cut mine in fourths to make baby tacos but you can cut it however you prefer. 8. Add the onion, green pepper and tofu to your tortilla, top with the baked Roma tomatoes and any other desired toppings (I put more hot sauce, of course). 9. Avocado on the side because well... avocado, always. I had some of the tofu, onion and green pepper mixture left over that I'm using for lunch tomorrow so I got two meals from one. Enjoy! It's been a while since I posted and for that, I'm sorry! Life happens and ya get busy. BUT, I had today off and I thought it was time to make this vegan chili I have been wanting to try. The recipe was a little lengthy to post on Instagram, so here it is!
Here is the Pinterest recipe I followed: bbritnell.com/loaded-vegan-chili/ However, I added 2 chopped up jalapeños and instead of chili powder (because I didn't have any, I used Trader Joe's Chili Lime seasoning. It seemed to be an decent substitution! I also added red pepper flakes to give it a bit more heat. WHAT YOU NEED:

This makes A LOT of chili, so I put it in containers and put it in the freezer. Safe to say I have chili for a while. Enjoy! It's Sunday which meant meal prep day and that means grocery shopping day! This week I needed stuff that I don't normally buy on a weekly basis (almond butter, granola, sauces, etc.) so it was quite the shopping day.

I was home for the long weekend so I did my grocery shopping yesterday, of course at Trader Joe's. I've been wanting to get some new curry simmer sauce and found some at TJ so, tonight I used it and...it was delicious!! (But what isn't from there?) Speaking of Trader Joe's, I'm thinking about next time I go I'll make a post about my favorite, must-have items from there. Thoughts?!

So one of my favorite sandwiches from Potbelly was the chicken salad sandwich. Healthy? Going to say no. Delicious? Obviously, yes. I enjoy chicken salad so when I became vegetarian I of course took to Pinterest to find alternatives. Ta-da! I found chickpea "chicken" salad, read various recipes then just decided to bag those and create my own (not the first time I've done that with recipes lol). You can have it on a wrap, sandwich, on a salad or just plain. Here's the scoop!

Maybe it's just me... but I feel like on Friday nights a ton of people have pizza for dinner. Pizza Friday, is that thing? Well, my friend sent me a flatbread recipe that is super simple and quick to make. I really wanted to try it and had some leftover pizza sauce in the fridge so I figured I would make flatbread pizza and it was delicious! Here's the low down.
FLATBREAD Recipe:
Don't get me wrong, I'll eat eggs. However, I pretty much always have tofu in my fridge and it's just as easy to whip this up as it is eggs. Plus, it's a good source of protein so if you're a non-meat eater this is a good way to get that into your diet. I've used several types of tofu (regular, firm, extra firm) any kind will work, but I prefer firm or extra firm.
I'd first like to make one comment though- if you want your tofu to stay fresh change the water every day (shoutout to my Dad for reading the package and changing my tofu water every day when I was living at home lol). When you open a new package of tofu, whatever you don't use just put in a container and fill it up with water, bop it back in the fridge and you're golden. Ok... back to the scrambled tofu. What you need:
